I would say I’m pretty proud of the recipes on this site. A few have needed edits here and there, but overall, the recipes I’ve shared here are still some of my favorites I turn to over and over again. Yet every now and then, I come across a new recipe that is outstanding compared to the rest, and I am telling you my friends, these banana oatmeal pancakes are by far one of my favorite breakfast recipes ever. Cue Jack Johnson, we’re making banana pancakes.
I’ve been wanting to make a banana oatmeal pancakes recipe for a while now but kept putting it off. To be honest, a lot of oatmeal banana pancakes that are on the Internet kind of—um—suck. A lot of them are three-ingredient “blender” pancake recipes, and the batter does not turn out good.
I knew I wanted my banana oatmeal pancakes to be as simple as those blender pancakes, but actually taste good and have at least some of that fluffy height pancakes are supposed to have. So I added a few extra ingredients to make the pancakes taste like more than just blended oatmeal and banana.
And while I was skeptical at first, the first bite fully convinced me that banana oatmeal pancakes are indeed delicious if you make them right, and I’m not sure I’ll ever want to make another breakfast recipe again. If you’re not in the mood to be addicted to something new, then you may want to close this web page. Seriously. Be ready to want to make these all the time.
Banana Oatmeal Pancakes
Equipment
- Griddle
Ingredients
- 1/2 cup rolled-cut oats
- 1/2 banana medium-sized, around 7"
- 1 egg
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp vanilla extract or imitation vanilla
- 2 Tbsp unsweetened almond milk
- 1 tsp maple syrup
- Butter for the griddle/pan
Instructions
- Add of the ingredients (except for the butter) into a high-powered blender. Blend until smooth, about 30-40 seconds.
- Heat up a griddle or a flat griddle pan over medium-low heat. Carefully run the stick of butter over the pan to coat, or cover with a cooking spray.
- Pour 3 tablespoons of batter per pancake on the pan. This should make about 5 pancakes.
- Cook the pancakes on each side for 2-3 minutes, or until they are slightly crispy and golden brown.
- Slice up the rest of the banana to serve with the pancakes and drizzle with syrup, if desired.
