I get it—when you reach the end of a long workday, the last thing you likely want to do is cook. Especially if the usual recipes you turn to take a long time to make. When the clock hits 7 p.m. and it’s time for me to get cooking, I always go for easy. Actually—the term is more like lazy. Any quick weeknight dinner I can throw together in less than 30 minutes is the ideal scenario, and often times I turn to one of the recipes listed below.
These quick weeknight dinner ideas are my all-time favorites to make. They cook under 30 minutes, taste incredible, and require minimal clean-up. Some are faster than others (like my 10-minute Upgraded Chicken Ramen, or the Classic Cheeseburgers), some require only one pan or pot (like my One-Pot Bolognese, or the Cajun Shrimp Sheet Pan), and some are perfect for just one person (like the Baked Feta Pasta, or the Chipotle Chicken Toastie).
Whatever you are in the mood for, and whatever your circumstance is, I guarantee you’ll find a quick weeknight dinner that works for you on the list. And I plan on adding to this as I continue to post more to this blog.
