Buying a rotisserie chicken is one of my favorite ways to meal prep. Typically I’ll buy a chicken so I can have the legs and wings for dinner, then I’ll shred up the rest of the meat and store it in the fridge for lunches the following week. And I’ll make all kinds of lunches—some that are already featured on this blog! So I figured I’d share with you a few of my favorite lunches to make with rotisserie chicken.
Below you will find five lunches that you can make throughout your week with rotisserie chicken. Now you can either enjoy each lunch for every workday of the week. Or you can choose one of these lunches and prep them to enjoy throughout the entire week! I mean, it’s really up to you.
However, now that I’m working from home for the foreseeable future, I’ve been really into cooking different lunches with rotisserie chicken each day. It gives me a chance to take a break and cook a little bit, giving me the chance to enjoy something new every day. Which isn’t my usual MO during the workweek because I’m all about that meal prep.
Any who, here are five lunches you can make with rotisserie chicken, as well as the ingredients you’ll need if you decide to try it next week!
Lunch Chicken Flatbread
You can use up any leftover flatbread, sandwich wrap, or tortilla in your fridge for a simple easy-to-throw-together chicken pizza.
Groceries you’ll need: Rotisserie chicken, flatbread (or wrap), shredded parmesan, diced tomato, kale, shredded mozzarella
Chipotle Chicken Bacon Toastie
Toast up this chicken toastie with homemade chipotle mayo, then dip into a warmed cup of soup!
Groceries you need: Rotisserie chicken, chipotles in adobo sauce, artisanal bread, sliced cheddar cheese, sliced Monterey jack cheese, sliced tomato, bacon
Apple Kale Salad
This salad can honestly work well with any leafy green or nut you have in the kitchen. Top with diced apple, shredded chicken, goat cheese, and a low-cal balsamic vinaigrette.
Groceries you’ll need: Rotisserie chicken, kale (or other leafy greens), apples, almonds (or pecans), diced apple, goat cheese, balsamic vinaigrette
Chicken Salad Lettuce Wraps
Mix up the leftover rotisserie chicken with these chicken salad ingredients and enjoy on a salad, inside large lettuce wraps, or even on a sandwich or regular wrap. Prep a small bowl for a single sandwich or a huge bowl to enjoy all week long!
Groceries you’ll need: Rotisserie chicken, mayonnaise, grapes, celery, sliced almonds
Sheet Pan Chicken Nachos
For a special Friday lunch, top tortilla chips with chicken and your other favorite taco toppings and bake in the oven until melty and crispy. Top with dollops of sour cream and devour!
