I know everyone’s all pumpkin spice latte already, but it’s still tomato season and gosh dang it, I’m not ready to give it up! It may be September but I still have 21 glorious days of summer left in this month and I’m going to soak up every single minute of it. Staring with this tomato ricotta toast.
Can we talk about summer cooking for a hot minute? Emphasis on hot. Guys, I have zero motivation to cook because it’s just bloody hot outside, and the absolute last thing I want to do is turn my oven on. Even my stove can get the temperature spiking in our apartment, and it’s the absolute worst. Recipes that require little to no heat? Yeah, I’m all about it.
It also kind of throws a wrench in the whole recipe development thing, ya know? Like, I have all of these awesome ideas for recipes but I am so sorry I am not turning on my stove for it yet. I will soon—promise, you’ll get your stuffed acorn squash and all of those other fun recipes…in 21 days when it’s appropriate and I can handle turning my oven on, ya feel?
I’ve also been super busy finishing up my nutrition course through Stanford, which I actually finished yesterday! I’m so excited to share all of the fun nerdy nutrition things with all of you. Get ready to nerd out with me.
Anywho…I mean it when I say this tomato ricotta toast is simple—this recipe only requires three ingredients: The juiciest tomatoes, a container of ricotta, and a toasted slice of sourdough bread.
I’m going to put a recipe card here for the sake of having one for our records, but honestly, y’all know you don’t need one. Just go out there today and make yourself some tomato ricotta toast. You won’t regret it, I promise.
Tomato Ricotta Toast
Ingredients
- 1/2 tomato sliced thick
- 1/4 cup ricotta cheese
- 1 slice of sourdough bread
- Salt & pepper
Instructions
- Toast a slice of sourdough bread. Spread the ricotta cheese on the toast, then place the tomato slices on top. Sprinkle with salt and pepper, then devour.
