Well, here we are. Another week has gone by and we’re already thinking about what to cook for the following. I’m posting this now, but honestly plan on doing absolutely nothing today. Okay, maybe going to the beach. But the meal prep will certainly be happening later.
For this week’s meal plan, I was thinking of colors. Summer always has me craving foods from all different colors of the rainbow, so I made sure to incorporate a lot of them. From blueberries, saucy tomatoes, yellow eggs, green kale and bell peppers, orange sweet potatoes, and dreamy strawberry shortcake with sugary strawberries and homemade whipped cream, we’ve got a yummy week ahead of us.

Breakfast: Blueberry Coffee Cake
Make the most of those summer blueberries with a slice (or two) of crumbly coffee cake each morning. Enjoy it with a cup of coffee, of course!
What you’ll need: Sugar, butter, vanilla extract, eggs, flour, salt, baking powder, baking soda, sour cream, blueberries, brown sugar, cinnamon
Lunch: Kale Salad with Green Goddess Dressing
Prep this green goddess dressing and enjoy it on a kale salad topped with sliced almonds, roasted sweet potato, goat cheese, and cooked chicken or turkey breast.
What you’ll need: Greek yogurt, kale, garlic clove, parsley, salt, pepper, kale, sweet potato, sliced almonds, goat cheese, cooked chicken or turkey breast
Dinner #1: Fish Tostadas
Make tostadas for two dinners this week! You can prep fish taco meat using this recipe. Don’t have a generic taco seasoning? Use the same seasoning in the chickpea fajitas—linked below.
What you’ll need: White fish (tilapia or cod), black beans, corn tortillas, salt, pepper, cooking spray, olive oil, garlic clove, lime, avocado
Dinner #2: Roasted Chickpea Fajitas
Because you have those tortillas, might as well enjoy another meal with them! These roasted chickpea fajitas are easy to throw together and will last you for a few dinners.
What you’ll need: Tortillas, can of chickpeas, red bell pepper, green bell pepper, yellow onion, paprika, chili powder, cumin, olive oil, salt, pepper
Brunch: Shakshuka
Enjoy this spicy, saucy shakshuka for brunch on the weekend! I highly reccomend dipping pita bread in it, but that’s totally optional.
What you’ll need: Can of fire-roasted tomatoes, yellow onion, green bell pepper, olive oil, eggs, garlic clove, feta cheese, salt, pepper, pita bread, parsley (optional)
Dessert: Strawberry Sourdough Shortcake
Use up your sourdough discard this week with an easy dessert! Don’t have any discard? Make a sweet biscuit using this recipe instead, and still follow the recipe for the strawberries and the homemade whipped cream.
What you’ll need: Sourdough starter, strawberries, lemon juice, sugar, flour, baking powder, baking soda, salt, butter, heavy whipping cream

Before shopping, always make sure to check if you have any of these ingredients already. No need to buy the same thing twice!

- 1 package of blueberries
- 1 package of strawberries
- 1 bunch of curly kale
- 1 head of garlic
- 1 bunch of parsley
- 1 sweet potato
- 1 avocado
- 2 green bell peppers
- 1 red bell pepper
- 2 yellow onions
- 1 lemon
- 1 lime
Bakery
- Pita bread
Dairy
- 1 small container of sour cream
- 1 pound of salted butter
- 1 5.3 oz. container of plain Greek yogurt
- 1 container of crumbled goat cheese
- 1 container of feta cheese
- 1 pint of heavy whipping cream
Protein
- 1/2 dozen large eggs
- Cooked turkey or chicken breast (you can find this near the chicken!)
- 2 white fish fillets (tilapia or cod)
