So, this month I’m embarking on a crazy journey of writing an entire novel in a month. It’s…yeah. Crazy. I’m following the #NaNoWriMo challenge (National Novel Writing Month), where each writer is challenged to write 1,667 words a day, or 50,000 words in one month. I’ve decided to bump up my goal and write 2,000 words a day for a total of 60,000 in a month.
Anywho, with all of this writing going on, I’m going to have to be strategic with my meals because I’m gonna be, well, busy. So I decided to link a few of the recipes I plan on making so I have a list to turn to when the going (read: writing) gets tough.
Weeknight Dinners
It’s the convenience of the dump-and-bake (or roast) that makes these types of dinners so ideal. Especially when you’re busy.
Cheesy Chicken Tortellini Bake
Sheet Pan Chicago Style Sausage Sandwiches (The Washington Post)
Weekend dinners
Because sometimes you want to take the time to cook something nice on the weekends, ya know?
Pesto Caprese Chicken in White Wine Sauce (Half Baked Harvest)
Spicy Oregano Meatballs with Grilled Vegetables and Tzatziki (Half Baked Harvest)
Breakfast & lunch meal prep
Do you ever get sick of cooking the same thing over and over? That’s sort of been me lately—so I picked up two new lunch recipes to switch it up, and I’ll throw together this oatmeal bake I haven’t made since last winter.
BLT Caprese Sandwiches on Baguettes (Bev Cooks Blog)
Cashew Crunch Salad with Sesame Dressing (Pinch of Yum)
Thanksgiving
This year I’m tag-teaming Thanksgiving dinner responsibilities with my fam, so I figured I’d share some of the recipes I’ll be cooking. I have two new ones I’m making this year…but they deserve their own posts. So stay tuned for those recipes!
Crispy Apple Turnovers (Eat This, Not That!)
Healthy Green Bean Casserole (Eat This, Not That!)
Pumpkin Bars (Taste of Home)
Sourdough Focaccia (Artisan Sourdough Made Simple)
