Well, it happened. Your girl is VAXXED.
I got my second dose of the Pfizer vaccine on Monday afternoon, and besides some nausea a few hours after, I felt completely fine. I’m really proud of our scientists, doctors, nurses, and other front-line health care workers—thank you for all that you do!
So…where should I travel first?!
While you brainstorm my first trip, here’s what I’ve been reading/loving lately.

This tweet really spoke to me this week. It made me think of the movie Inside Out and how Sadness was as important as Joy, even if we do our best to try and ignore those moments of feeling sad. This week, I embraced the sadness as I grieved a life that once was…knowing that the life before me will be drastically different.
As a recipe developer, I am dying to get my hands on The Flavor Thesaurus. I feel like a lot of the time I’m making up flavor combinations based on what I think tastes good, but I think it would be really interesting to actually learn the proper flavor combos.
I am now a huge halloumi cheese fan—did you see it in my recent recipe? It’s the perfect cheese for roasting and frying because it doesn’t melt and ooze like other cheese. Really, really tempted to try these Oven Fried Halloumi Bites with Hot Honey.
I’ve been super into the deconstructed deviled egg lately. By deconstructed I mean a hard-boiled egg with a slathering of mayo on top, because who actually wants to take the time to empty out the egg yolks, whip them up, and pipe them back in? Not me. These Jammy Eggs with Paprika Aioli have that same vibe.
Speaking of cooking, what’s everyone making for Easter? I’ll be going with a classic tomorrow, pot roast.
