I’ve been waking up each morning and pretty much doing the same thing. 6 a.m. wake-up call. Get a pot going for some tea. Light my pumpkin harvest candle. Wrap myself up in a blanket, and crank out another chapter of my new novel. I’m over 38,000 words into my first NaNoWriMo challenge (writing a novel in a month) and I can’t seem to get my fingers to stop. The story is just flying out of me. Sometimes when I get caught up in the nuances of life, I forget how much I love to just sit down and write a good story.
Anyways, after about two hours of that, I squeeze in a quick workout and end up having a craving for the same exact breakfast. Maybe it’s because I’m doing the same thing every day? Like I’ve done the whole Pavlov’s dog situation to myself and now all I want is pumpkin oatmeal in the morning? I bet you when December first rolls around my craving will drastically change, you just watch.
So yeah. Pumpkin oatmeal is the name of the game right now. It’s an old recipe of mine from last year that I thought I would bring to the forefront of your minds because it’s just such a good one right now. A cozy warm bowl of oatmeal in the morning with gooey pumpkin and sweet maple syrup.
The toppings for my pumpkin oatmeal bowl will kind of range depending on the mood. Sometimes I’ll go for a scoop of my favorite dried fruit and nut mix. Other times it’s a handful of fresh raspberries and a sprinkling of pecans. But I almost always add in some chia seeds. Because according to my doctor I have high cholesterol right now? I’m not too worried about it—and just kind of eating a bit more chia seeds than normal.
