Another day. Another week. Another what I eat in a day post. I enjoyed posting my first one, so I figured I would share with you some of the delicious meals (and snacks) I’ve been eating while cooped up at home. The applicable recipes are linked—enjoy!
Breakfast: Chocolate Oatmeal with Berries
I’ve been experimenting with different flavors of oatmeal. And I’m not talking those oatmeal packets…but different ways to flavor stovetop oatmeal with the things in my pantry and fridge. I’ll likely post a recipe for this, but if you want to try it out yourself, it’s 1/2 cup of rolled-cut oats and 1 cup of almond milk cooked on a stovetop for 3 to 5 minutes, or until bubbling and the oatmeal starts to thicken. Stir in 1 tablespoon of cocoa powder, 1 tablespoon of peanut butter, and 1 teaspoon of maple syrup. Turn off the heat and cover your pot for 1 minute to let it continue to thicken. Remove to a bowl and top with fresh berries!
Lunch: BLT Sandwich
When it comes to lunches, I sort of go through phases. I just had a few weeks of being super obsessed with making salads, but I’m starting to get bored with it. So I decided to follow that desire and I’ve moved on to sandwiches. I actually this BLT recipe with two slices of my favorite sprouted bread.
Snack: Carrot Celery Juice
So…I never thought I’d write this sentence, but I’ve been juicing things lately. I’ve had the opportunity to try out DASH’s juicer and I’m kind of sort of obsessed with it. I made this particular carrot juice recipe that I found online and wow, it is so, so good. I actually subbed the apple for a pear, and I didn’t use orange. Again, I’ll probably post my own recipe for it someday.
Dinner: Tostadas with Refried Black Beans
My husband doesn’t agree with eating tostadas (“why would you when you can just eat a taco?”) but I personally like them. I like having super crispy tortillas and eating them open-faced. You crisp up the tortillas under a broiler, spread on those homemade refried black beans, then top with whatever toppings you desire. I recommend either making fish taco meat or chicken taco meat, along with pickled red onions and some sliced avocado.
Dessert: Ice cream sandwich
I love having a little sweet treat during the day! Usually, it’s in the afternoon, but for this day I enjoyed having an ice cream sandwich right after dinner before settling in on the couch and watching an episode of Gilmore Girls. Because yes, I’m rewatching the series. Again.
