As soon as the weather hit over 55 degrees, I was putting air in my bike tires and went off on a ride. I love to bike the loop in Prospect Park, or take my bike down to Coney Island and sit on the beach for a little while. Having a bike in the city has been the biggest stress reliever for me—besides buying one of those granny grocery carts, of course. Having a set of wheels in the city is freeing, and helps you get places a lot faster. Especially areas that are hard to get to on the subway.
Now that I’m fully vaccinated, I’ve felt brave enough to actually go out and explore a little more. I’ve actually taken a few trips to see my family down in Florida, and I plan on heading up to Connecticut soon to see more family and friends. Boy does having this vaccine change the game. My mood has instantly lifted because of it.
Here are some of the things that have been on my plate over the past few weeks—a few favorite reads I think you would enjoy!
Weekend reads
My Body Got Me Through the Pandemic. It Doesn’t Need to Be ‘Bikini Ready’ (Vogue) This essay exactly expressed my feelings about the pandemic and our bodies. If you’ve been having struggles with your body image as the world starts to open back up, know that you aren’t alone.
My Husband’s Pandemic Hobby. (The Everywherist) Geraldine is one of my favorite writers of all time. Her words are always witty and colorful and make me laugh out loud. I particularly loved her recent essay about her husband’s love for cooking in the pandemic—and how that hobby has become a threat for traditionalist households who can’t seem to understand that a man actually can do domestic work in the home—and that domestic work is actually hard.
This Farmer Is Educating People About The Expiration Dates On Their Food, And It’s Important To Know (Buzzfeed) I’m always freaking out about expiration dates and food going bad…and my husband is always telling me to stop freaking out. He’s from a small farm town. Hmmm…seems to be a theme? We really need to start listening to our farmers.
Stop “black and white” thinking when it comes to socializing! (Instagram // @collegenutritionist) Every now and then I’ll take a peek on Instagram on my desktop (since I no longer have it on my phone) and I like to catch up on any food trends or posts from bloggers/RDs that may be of value to my readers. This one stuck out to me! Why do we feel like socializing has to mean eating unhealthily? Why can’t we have the best of both worlds?
How to Organize Your Freezer (Epicurious) This ambitious freezer is making me think I need a freezer makeover. Right now I have all of my foods artfully stacked on each other, with a few frozen pizzas balancing everything together.
Weekend eats
Stem to Floret Broccoli Nuggets (The Whole Carrot) Broccoli turning into nuggets? I’m intrigued! Definitely adding this recipe to my need-to-try list. Which seems to keep getting bigger by the day…
Crispy Black Bean Tacos with Cilantro Lime Sauce (Pinch of Yum) These simple black bean tacos seem too good to be true! How can they be that easy and look that good?!
Mini Brown Butter Popovers with Jammy Strawberries (Half Baked Harvest) I’ve been dying to try and make popovers, but haven’t felt motivated enough to buy a popover pan for the oven. Then this genius recipe popped up in my inbox and I realized…why couldn’t I make them in muffin tins? Totally going to try this one!
That’s all, folks! Have a great weekend.
