Ingredients
4oztubular pasta (penne, ziti, or rigatoni)about 1 dry cup
4tspolive oildivided
2Italian-style chicken sausage linkschopped
1pintcherry tomatoes
1small oniondiced
2garlic clovesminced
1tspItalian seasoning
1tspsugar
Salt & pepperto taste
Shredded or grated parmesanfor topping
Instructions
Fill up a medium-sized pot halfway with water. Bring water to a boil and sprinkle in some salt. Add the pasta and cook for 6-8 minutes, or until al dente. Drain.
While the pot is coming to a boil, in another pot (or dutch oven) heat up one teaspoon of olive oil on medium heat. Toss in the chicken sausage and cook until warmed through—about 3-5 minutes. Remove to a bowl and set aside.
Add the other tablespoon (3 tsp) of olive oil as well as the cherry tomatoes, onion, garlic cloves, and Italian seasoning. Cook on medium-low for 8-10 minutes, or until the cherry tomatoes are peeling and ready to burst.
With the back of a wooden spoon, gently burst the tomatoes open to release the juices. Sprinkle in the sugar, then mix together to combine.
Toss in the chicken sausage and cook pasta. Season with salt and pepper to your liking.
Dish out servings and top with parmesan, if you prefer!
