The Easiest Baked Salmon

Throw together this easy baked salmon for dinner (or lunch) when you're in the mood for fish but don't feel like putting a ton of effort into cooking.

  • Aluminum foil

Ingredients

  • 2 4 oz. salmon fillets
  • 1 lemon sliced
  • 1/2 cup parsley with sprigs lossely packed
  • 2 tsp olive oil
  • Salt & pepper

Instructions

  • Preheat the oven to 375 degrees.
  • Place a piece of aluminum foil on a small sheet pan.
  • Drizzle 1/2 teaspoon of olive oil on the bottom of the aluminum.
  • Lay down a few slices of the lemon on the bottom of the aluminum foil. Then add a few parsley sprigs.
  • Place the salmon fillets on top of the lemon and parsley.
  • Drizzle the rest of the olive oil on top of the salmon fillets, then season with salt and pepper.
  • Add a few more lemon slices on top, along with some parsley.
  • Close up the aluminum foil and bake for 20 minutes.
  • Once finished baking, turn the broiler on. Open up the aluminum foil and place the sheet pan back in the oven.
  • Broil for 3-5 minutes, or until the salmon is fully cooked through. The internal temperature should read 145 degrees.
  • Squeeze the warmed lemon on top of the salmon fillet. Serve with your favorite vegetables.
