Preheat the oven to 375 degrees.
Place a piece of aluminum foil on a small sheet pan.
Drizzle 1/2 teaspoon of olive oil on the bottom of the aluminum.
Lay down a few slices of the lemon on the bottom of the aluminum foil. Then add a few parsley sprigs.
Place the salmon fillets on top of the lemon and parsley.
Drizzle the rest of the olive oil on top of the salmon fillets, then season with salt and pepper.
Add a few more lemon slices on top, along with some parsley.
Close up the aluminum foil and bake for 20 minutes.
Once finished baking, turn the broiler on. Open up the aluminum foil and place the sheet pan back in the oven.
Broil for 3-5 minutes, or until the salmon is fully cooked through. The internal temperature should read 145 degrees.
Squeeze the warmed lemon on top of the salmon fillet. Serve with your favorite vegetables.
