Mini Chocolate Chip Oat Waffles

This recipe makes the perfect stack of mini chocolate chip oat waffles for one. Each stack includes four mini waffles!

Ingredients

  • 1/2 cup rolled-cut oats
  • 1/4 cup plain low-fat Greek yogurt
  • 1 egg
  • 3 Tbsp unsweetend almond milk
  • 1/2 tsp baking powder
  • Dash of salt
  • 20 chocolate chips
  • Cooking spray

Instructions

  • Combine all the oats, Greek yogurt, egg, unsweetened almond milk, baking powder, and a dash of salt into a high-powered blender. Blend until smooth—about 20 to 30 seconds.
  • Heat up the mini waffle iron. Once the light goes off, the waffle iron is heated and ready to use.
  • Spray down the waffle iron lightly with the cooking spray. Pour in 1/4 of the batter (about 1/4 cup) and sprinkle 5 chocolate chips on top. Close the waffle iron and let the waffle cook for 2 minutes.
  • Repeat the last step for the other 3 waffles, or until your batter is out.
  • Serve warm with butter and maple syrup, or any other toppings you desire.

Notes

If you have a normal-sized waffle iron, you can use this same recipe to make a large waffle for one.
