Ingredients

  • 1/2 tbsp butter plus extra for coating
  • 1 tbsp unbleached all-purpose flour
  • 1 tbsp corn meal
  • 1/2 tsp sugar
  • 1/8 tsp baking powder
  • 2 tbsp milk
  • Dash of salt
  • 1/4 tsp cornstarch
  • 1 peach pitted and sliced
  • 1/2 tsp lemon juice
  • 1/2 tsp brown sugar
  • 1/4 tsp cinnamon

Instructions

  • Preheat the oven to 375 degrees.
  • Melt the butter in a small bowl.
  • In the bowl with the melted butter, whisk together the flour, cornmeal, sugar, baking soda, milk, and a dash of salt. Set aside.
  • Coat the inside of a mini dutch oven or a ramekin with butter.
  • Add the sliced peaches, cornstarch, lemon juice, brown sugar, and cinnamon into your buttered dish. Stir until everything is combined and the peaches are evenly coated.
  • Scrape the cornmeal mixture onto the top of the peaches. Use a rubber spatula to spread around the top of the peaches.
  • If you have a mini dutch oven, put the lid on it. If not, place the prepared ramekin on top of a small sheet pan or baking sheet.
  • Bake in the oven for 30 minutes.
  • Serve with a scoop of vanilla ice cream.

The calories do not reflect the extra scoop of vanilla ice cream—simply the prepared peach cobbler.
