Ingredients
1/2tbspbutterplus extra for coating
1tbspunbleached all-purpose flour
1tbspcorn meal
1/2tspsugar
1/8tspbaking powder
2tbspmilk
Dash of salt
1/4tspcornstarch
1peachpitted and sliced
1/2tsplemon juice
1/2tspbrown sugar
1/4tspcinnamon
Instructions
Preheat the oven to 375 degrees.
Melt the butter in a small bowl.
In the bowl with the melted butter, whisk together the flour, cornmeal, sugar, baking soda, milk, and a dash of salt. Set aside.
Coat the inside of a mini dutch oven or a ramekin with butter.
Add the sliced peaches, cornstarch, lemon juice, brown sugar, and cinnamon into your buttered dish. Stir until everything is combined and the peaches are evenly coated.
Scrape the cornmeal mixture onto the top of the peaches. Use a rubber spatula to spread around the top of the peaches.
If you have a mini dutch oven, put the lid on it. If not, place the prepared ramekin on top of a small sheet pan or baking sheet.
Bake in the oven for 30 minutes.
Serve with a scoop of vanilla ice cream.
