Instant Pot Risotto

Make the easiest risotto in your Instant Pot in less then 15 minutes.

  • Instant Pot


  • 1 tsp olive oil
  • 1 shallot diced
  • 2 garlic cloves minced
  • 2 cups chicken broth
  • 1 cup arborio rice
  • 2 Tbsp butter
  • 1/4 cup grated parmesan cheese


  • Turn the Instant Pot on the Sauté feature. Once hot, add in the olive oil, diced shallot, and minced garlic. Cook for one minute.
  • Pour in the chicken broth and the arborio rice. Mix to combine, then seal with the Instant Pot lid.
  • Switch to Pressure Cook (or Manual Cook) and set for 6 minutes. It will take some time to fully pressurize before cooking, so just leave it.
  • When the timer goes off, release the steam immediately (safely with a wooden spoon).
  • Remove the lid and stir in the butter and grated parmesan. Continuously stir until the butter is fully melted.


If you want to add cooked vegetables or any kind of seasonings/flavors to your risotto, do so when you stir in the grated parmesan and butter.
