Avocado Toast with Soft Boiled Eggs

Don't be intimidated making soft boiled eggs! They are much easier to cook than you think. Here's how.

Ingredients

  • 1 slice of toast
  • 1/2 avocado
  • 1 egg
  • Salt & pepper

Instructions

  • Fill a small pot halfway with water, then set on the stove to boil.
  • When the water is boiling, slowly place the egg into the water with a slotted spoon. Cook for 6 minutes.
  • Remove the egg to a colander, then run under cold water until cool to touch.
  • Crack the eggs by rolling them on a cutting board, then peel slowly.
  • Scoop out the 1/2 avocado and smash it onto a piece of toast.
  • Place the egg on the avocado toast, then slice open. Sprinkle with salt and pepper if desired, then eat!
