Prosciutto Cucumber Bites
For an easy low-carb appetizer, throw together these prosciutto cucumber bites, made with only three ingredients.

- 1 seedless English cucumber
- 1 box Boursin cheese Garlic & Herb flavor
- 1/4 lb. sliced prosciutto
Slice the cucumbers around 1/4 inch thick.
Spread the Boursin cheese on each cucumber. The amount you want to spread on each is completely up to you.
Slice (or rip) the prosciutto into tiny strips. Scrunch up the strip and place it on one of the cucumbers.
Serve on a large plate or cutting board with other charcuterie.
