BLT Sandwich

Use up those fresh tomatoes and throw together this BLT sandwich for lunch.

Ingredients

  • 4 slices of bacon
  • 4 butterball lettuce leaves
  • 4 slices of tomato
  • 2 slices of whole wheat bread or sourdough
  • 1 tsp mayonnaise
  • Salt & Pepper

Instructions

  • Place the slices of bacon on a bacon plate and cover with a paper towel.
  • Place the covered bacon plate in the microwave and cook for 3-4 minutes on high, or until the bacon is crispy.
  • Toast the two slices of whole wheat bread.
  • Spread the mayonnaise on one side of each slice, then lightly sprinkle with some salt and pepper.
  • Cut the slices of bacon in half. Add the bacon, the lettuce leaves, and the tomato slices to one slice of toast. Top with the other slice.
  • Chop in half with a serrated knife and enjoy!
