    What to Cook

    Another week ahead of us! This week I decided to take inspiration from the plan I semi-followed the past few days. I’ve been obsessed with my pumpkin pancakes, and a small spark of inspiration had me whipping up my Italian bruschetta recipe for lunches. I enjoyed it with a big side of greens, and it was delightful. Here’s what we’re cooking this week. Don’t like a recipe you see? You can always switch it out with something else!     Breakfast: Pumpkin Pancakes


    What you’ll need: Pumpkin puree, pumpkin spice seasoning, oat flour (or rolled-cut oats), maple syrup, eggs, butter, almond milk, baking powder, vanilla extract

    Lunch: Italian Bruschetta with Goat Cheese

    What you’ll need: Artisanal bread/baguette, tomatoes on the vine, grape tomatoes, goat cheese, basil, grated parmesan, olive oil, garlic

    Dinner #1: London Broil with Buttery Shiitake Mushrooms

    What you’ll need: London broil steak, shiitake mushrooms, butter, brown sugar, paprika, coriander

    Dinner #2: Pesto Chicken

    For an easy side, cook some green beans! Boil them for 5-7 minutes, then mix them with some melted butter, salt, and pepper.


    What you’ll need: Chicken, mozzarella, pesto, green beans, butter

    Brunch: Savory French Toast

    What you’ll need: Artisanal bread/baguette, grape tomatoes, egg, milk, Italian seasoning, cooking spray, parmesan cheese

    Dessert: Chocolate Chip Cookies

    What you’ll need: Butter, brown sugar, white sugar, vanilla extract, baking powder, baking soda, egg, all-purpose flour, semi-sweet chocolate chips

    Your Grocery List

    Produce:

    • Tomatoes on the vine
    • Grape tomatoes
    • Green beans
    • Shiitake mushrooms
    • Basil

    Bakery:

    • Artisanal Italian loaf (or baguette)

    Dairy:

    • Almond milk
    • Goat cheese
    • Butter
    • Shredded mozzarella
    • Grated parmesan
    • Regular milk (only need a splash, cream or almond milk will do)

    Protein:

    • 1 dozen large eggs
    • 1 London broil steak
    • 2 chicken breasts

    Pantry goods:

    Check to make sure you don’t already have these!

    • 1 can of pumpkin puree (not pumpkin pie mix)
    • Pumpkin pie seasoning
    • Baking soda
    • Baking powder
    • Oat flour (or 1 cup of rolled-cut oats to make flour)
    • Pure maple syrup
    • Vanilla extract
    • Olive oil
    • Brown sugar
    • Coriander
    • Paprika
    • 1 small container of pesto
    • Salt & pepper
    • Italian seasoning
    • White sugar
    • All-purpose flour
    • Semi-sweet chocolate chips
