While I love to show you all these delicious recipes you can make at home, let’s be real here: you know I’m not cooking like that all the time. When you actually look at what I eat in a day, it’s pretty simple. I thought I’d give you a sample of one of the meal plans I made for the week by showing you what I eat in a day.
I admit I got the inspiration for this series from YouTube. I see YouTubers posting these cute videos all the time showing their hungry viewers what they typically eat in a day. So naturally, I thought I could replicate the same type of idea, but in a written format.
Here’s how this meal plan works.
Having a blog full of yummy recipes is fun, but for someone who’s simply meal planning for the week, looking at all those recipes can get overwhelming. So instead of getting all stressed out, I’m showing you how simple it can really be by breaking down what I planned for my week step-by-step.
When I plan meals, I eat the same breakfast, lunch, snack, and dessert every day. It’s easier (and cheaper) to plan my week this way, so those meals below stayed the same throughout the week. The only meal that changes is dinner because I like to give that meal variety. Plus, I find dinner to be the fun meal to cook—especially if it’s quick like this lemon garlic shrimp in white wine sauce.
This will likely be an ongoing series.
I’m all about starting a new themed blog series, and I figured this series was easy to pull off at least once a month. I’ll pop on here, share a few of the meals I snapped with my iPhone, and send you off with some helpful links that can get you prepped for the same meal plan in the future.
And we’re off! Here’s an example of what I eat in a day.
Breakfast: Fried egg and cheese on a bagel thin
When I’m craving breakfast sandwiches, I turn to bagel thins. While I do love having a full bagel sandwich every now and then, it’s way too heavy to have on a regular basis in the morning. To keep things lighter, I’ll fry up an egg (usually over medium so it’s not too messy), melt a slice of cheese on top, and plate it on a toasted bagel thin. I personally love O’Dough’s Vegan Everything Bagel Thins. They’re made from chickpeas, and they are the bomb dot com!
Lunch: Apple kale salad
For lunch this past week, I pulled out a classic favorite of mine: the Apple Kale Salad! Except I didn’t really have enough kale to make full salads with it all week, so I mixed the kale with some extra mixed greens we had in the fridge. It is SUPER filling.
3 p.m. Chocolate: Ice cream!
That’s right—I designate a time in my day to eat chocolate. After breaking up with dieting and starting a practice of intuitive eating, I was able to listen to my body’s satiety queues and really understand what it wanted, and when it wanted it. I found that I crave chocolate around 3 p.m. every day instead of after my dinner. It doesn’t fit the “status quo” but hey, who cares, right? I really should write a whole blog entry about my 3 p.m. chocolate time.
Anywho, for my dessert, I enjoyed a scoop of this Double Dunker ice cream made by Turkey Hill. I’m convinced it’s the best ice cream flavor ever invented.
Snack: Flavored Greek yogurt with almonds and chia seeds
I never expect that little scoop of ice cream (or whatever chocolate I settle on) to fill me up between lunch and dinner, so I also plan to have a snack. This week I’ve be enjoying mini yogurt bowls (similar to my Strawberry Greek Yogurt Bowls) made with Two Good flavored yogurt, chia seeds, and sliced almonds.
Dinner: Grilled steak and zucchini with roasted vegetables
As I mentioned, this is only one of the dinners I had planned for the week. But because this is “what I eat in a day,” I’m just going to show you one dinner I made with my family. We grilled up steaks with this Thai Chili marinade recipe, as well as a few slices of zucchini. We also roasted up broccoli (following this same guide) as well as some oven-roasted potatoes.
