Do you ever go to a restaurant and try a dish that’s good…but you know you can make it better? I do that a lot, actually. I find myself taking notes of dishes I try and replicating them in my own way. I’ve done that with my Italian Bruschetta recipe, which is still the top requested recipe from my Mom every time I’m with her. Her and I recently went to a café we love, and I tried a sandwich pretty similar to this prosciutto fig grilled cheese. Similar as in there were a few added elements that I felt didn’t need to be in the sandwich. So I simplified it, turned it into a grilled cheese, and voilá.
I admit, photographing a grilled cheese isn’t the easiest thing to do. I felt like I was rushing snapping a shot of this sandwich for you—and clearly only got one good shot. But hey, I just need you to see how yummy it is, then you can try it yourself.
To make this prosciutto fig grilled cheese, you only need four ingredients: Sandwich bread, fig jam, spreadable blue cheese, and prosciutto. Oh…and a little butter for the bread when you toast it on the pan. I was able to find the fig jam and the spreadable blue cheese in the artisan cheese section of the grocery store. For sandwich bread, I used a seeded whole-grain bread—like Ezekial 4:9 or Angelic Bakehouse.
Now here’s my trick for prosciutto, pay close attention: Go to the deli counter for prosciutto. While you may find it in the section with the artisanal cheese, you’re going to get it freshly cut (and for a decent price) at the deli counter. I was able to snag a 1/4 pound for around $3, which is a lot cheaper than what you would pay for prepackaged prosciutto near the cheese. Just my two cents!
Alright, that’s that. Here’s the sandwich—enjoy!
