Remember how I told you all about this cheese I’m obsessed with? If you’re new to my blog (welcome!), let me explain. There’s this spreadable cheese called Boursin that I seriously can’t get enough of. I mean I put it on everything—crackers, breakfast sandwiches, eggs, and now, cucumber bites.
I feel like the Super Bowl is the season for good appetizers. Not just a small bite or two before a meal, but heaping plates of munchies to enjoy while watching the game. My go-to is a slow cooker filled with buffalo chicken dip. But when I’m craving something lighter (to balance out all of the chips and dip) I like to have these prosciutto cucumber bites. Made with—you guessed it—Boursin cheese.
These prosciutto cucumber bites have three easy ingredients: cucumber slices, Boursin cheese, and prosciutto. Seriously, that’s it! You don’t even have to turn on the stove or oven for this appetizer, it’s that simple.
I thought of this cucumber creation when I was in Publix right after Christmas. I was waiting for my parents to arrive to Florida, so I decided to stock the house with some “nosh” for later. “Nosh” is what normal people would call happy hour, but for some unknown reason, my family has given it a new name. My dad will mix up some kind of cocktail (if we’re in Florida, it’s usually margaritas) and we put out some food to “nosh” on. Sometimes it’s simple—cheese, crackers, veggies, hummus, etc. But for this particular nosh session, I wanted to wow them with something fun. So on a complete whim, I grabbed these ingredients and crossed my fingers that they would taste good together.
I feel like every story that I tell ends the same on here: Yes, the recipe did taste good, because it’s now on the blog. Would I share a bad recipe? I mean, probably not, but if I do I promise to make it very clear.
My father was the one obsessed with these prosciutto cucumber bites. He loved them so much, we ended up buying all of the ingredients to make it again the following day. The crunch of the cucumber, the cheesy spread, and the salty prosciutto makes for a great combination. Especially if you’re pairing it with a sweet cocktail or a glass of white wine.
So whether you’re looking for an appetizer to serve during the big game, or want something to “nosh” on during happy hour, these prosciutto cucumber bites will always be a win with your crowd.
Prosciutto Cucumber Bites
Ingredients
- 1 seedless English cucumber
- 1 box Boursin cheese Garlic & Herb flavor
- 1/4 lb. sliced prosciutto
Instructions
- Slice the cucumbers around 1/4 inch thick.
- Spread the Boursin cheese on each cucumber. The amount you want to spread on each is completely up to you.
- Slice (or rip) the prosciutto into tiny strips. Scrunch up the strip and place it on one of the cucumbers.
- Serve on a large plate or cutting board with other charcuterie.
