Have I explained my theory about single-serving recipes yet? I honestly can’t remember if I have yet, so let me indulge you anyway. I believe recipes would be easier for everyone if they were written for a single serving. I know it sounds insane, especially if you’re regularly cooking for a family of more than four, but hear me out. Single serving recipes are much easier to multiple. A lot of recipes made for multiple servings are harder to replicate for a single serving, so cooking for one can seem almost impossible. But if we simply focused on recipes that were made for one serving…well, doesn’t that seem much easier? Doesn’t everyone win? Regardless, this peach cobbler for one should entice you.
I admit this recipe was inspired by the incredible Joy from Joy the Baker. She recently made a peach cobbler over the campfire—as part of her camp IGTV series—and I’ve had a craving for peach cobbler ever since.
But come on. Was I really going to make an entire peach cobbler for myself? It seemed like a waste.
So instead, I started experimenting with a single serving recipe. I knew I wanted the top to be some kind of corn base, but I wasn’t about to open a box of cornbread mix to only use a few tablespoons and throw out the rest. Instead, I prepped my own. It took quite a few tries to nail it, but once I did, it was golden. I mean, literally, golden on top. Perfection.
For those who are curious, yes, a cobbler and a crisp are different. Crisp is made with an oat topping (like my apple-pear crisp), while cobbler is topped with some kind of batter or biscuit dough. Some people enjoy having their cobblers topped with really thick biscuits, but after trying it myself, I wasn’t super into it. So I went back to a cornbread topping and thoroughly enjoyed it.
As you can see, I have a mini dutch oven for this, which I recently bought and I’m currently obsessed with it. I actually snagged mine from the Magnolia line at Target, but there are a few other similar ones on Amazon here. However, ramekins will also work well for this recipe.

Single-Serving Peach Cobbler
Ingredients
- 1/2 tbsp butter plus extra for coating
- 1 tbsp unbleached all-purpose flour
- 1 tbsp corn meal
- 1/2 tsp sugar
- 1/8 tsp baking powder
- 2 tbsp milk
- Dash of salt
- 1/4 tsp cornstarch
- 1 peach pitted and sliced
- 1/2 tsp lemon juice
- 1/2 tsp brown sugar
- 1/4 tsp cinnamon
Instructions
- Preheat the oven to 375 degrees.
- Melt the butter in a small bowl.
- In the bowl with the melted butter, whisk together the flour, cornmeal, sugar, baking soda, milk, and a dash of salt. Set aside.
- Coat the inside of a mini dutch oven or a ramekin with butter.
- Add the sliced peaches, cornstarch, lemon juice, brown sugar, and cinnamon into your buttered dish. Stir until everything is combined and the peaches are evenly coated.
- Scrape the cornmeal mixture onto the top of the peaches. Use a rubber spatula to spread around the top of the peaches.
- If you have a mini dutch oven, put the lid on it. If not, place the prepared ramekin on top of a small sheet pan or baking sheet.
- Bake in the oven for 30 minutes.
- Serve with a scoop of vanilla ice cream.
