I’ve never been a huge fan of mashed potatoes, but I wasn’t up for getting rid of potatoes altogether. So after a few years of experimenting, I’ve landed on the perfect baked fry recipe. One that works for both sweet potatoes and regular potatoes!
I shared a similar recipe (okay it’s basically the same recipe) a little over a year ago. But honestly, I love this recipe so much and it is so easy to make. I wanted to share it again JUST to make sure that you understood how easy it is. AND that it works for both kinds of potatoes.
This is a go-to side dish for us during the week. It’s not as unhealthy as frying up fries, and is absolutely delicious with a nice slab of steak. Or grilled chicken. Or fried chicken. Or pizza. I mean, anything really.
The prep work doesn’t take as much time, which is nice. It does take a little while in the oven, but without as much prep work, that saves you time to work on other things. During the last 8-10 minutes of the baking, Oliver and I will sear up some steak, boil green beans, throw some butter on both of them and crack open some beers. Seriously, it’s the best kind of weeknight dinner for us. I’m surprised Oliver isn’t super sick of it yet.
We like to serve these fries—both regular and sweet potato—with a little sriracha mayo. I usually throw two hearty spoonfuls of mayonnaise in a bowl and mix it up with a nice squirt of sriracha. If you’re feeling extra fancy, throw a little Worcestershire sauce in there as well. It completely changes the game.

Oven Baked Fries
Ingredients
- 2 Potatoes (regular or sweet)
- 2 tbsp Olive Oil
- Paprika
- Garlic Salt
- Salt
- Pepper
Instructions
- Preheat the oven to 400 degrees.
- Peel and cut the potatoes up into fry shapes. You can make them as thin or as thick as you want. I typically keep the size between a steak fry and a regular french fry.
- Mix the potatoes in a large bowl with the oil. Sprinkle the spices on top, and mix. I usually just eyeball this. Make sure there's enough spice coated on every fry.
- Spread the fries on a baking sheet coated with cooking spray (or oil). Make sure the fries aren't touching each other. This will help them to get crispy! If they're on top of each other, they will get mushy.
- Put them in the oven for 20 minutes, then take them out to flip the fries. Place them back in the oven for another 20 minutes. Depending on how hot your oven is, you may need to switch the trays around (top and bottom shelf) and leave them in for a bit longer. We typically leave them in for 25 minutes at the end.
- Mix some sriracha and mayonnaise in a bowl for an easy fry sauce, and enjoy!
