Another Sunday is upon us, and yet, every day feels like Sunday when you’re stuck at home. Except maybe for yesterday when we rolled out of bed at 10:30 a.m. That doesn’t happen on a workday, I guess. Alright, here’s what’s been going on this week.
This week I was challenged to throw together a cake recipe that could be as easy as making a boxed mix cake. Luckily, it worked, and we’ve been celebrating by eating this cake every day.
I’ve been spending an absurd amount of time on TikTok lately (guilty), and I came across these absolutely gorgeous videos from the account @humankindvideos. This particular transplant story had me in tears at 11am on Thursday. Our world is broken and everything is so sad, but I it’s stuff like this that reminds me of all of the beautiful light and goodness in this world. That’s probably why people are so obsessed with John Krasinski’s Some Good News broadcasts lately, because it feels good to hear good news.
I realized that having prepped meals this week felt really good. I mean, I know I’m home and I can just cook whatever I want and there’s really no need to prep meals like I would for lunches in the office. But having meals ready to go and only having to microwave for one minute? I mean, it’s still nice…so I prepped these buffalo chicken meatball bowls, and had some zucchini fritters on the side leftover from class on Monday.
Speaking of class, we’re making cocktails tomorrow on Instagram Live with my friend Taylor from @dontforgetthegarnish. We’ll be making margaritas! I’m also thinking later this week I’ll attempt Taylor’s Paloma recipe from his Instagram, because my Imperfect Produce box included some grapefruit this week and I literally have no idea what to do with them.
I attempted this sourdough pizza crust last night, and while the dough was nice, splitting in half may not have been the best call. It was fun having our own individual pizzas, but the crust for them was far too thin. I’m wondering if making one large pizza with the full crust would be better! I’m going to keep practicing on sourdough pizza crust so I can find the best recipe to share with you.
My husband discovered this awesome website called Eat Your Books, where you can enter in your library of cookbooks and use it as a database to search for recipes. For example, if you have sweet potatoes you need to use, just search in this database and it will tell you what to make with them! I’m so pumped about all the meals we’re going to be making this week.
I have been working relentlessly on this project of mine, and I’m finally launching it tomorrow. It was released to my newsletter audience this week, and I’m excited to now share it with the rest of the world. Make sure to look out for my little announcement on social this week!
