This photo is pretty funny because you can totally tell it was taken in January based on my computer background. But it’s the best photo to depict how my week has been. I had a lot of work to do this week to get ready for the long weekend. And you know what? I’m actually not that mad about it. The work I had to do was pretty fun, and I got to write a lot of really great articles that I feel pretty proud of. I’ll share in my specialty newsletter next week—so get on that list if you’re not on it yet!
What I’m doing
Today I’m off to the Jersey Shore for a wedding! My family and I rented out a huge Airbnb and we’ve got all sorts of fun shenanigans planned with the rest of the family this weekend—including a *dun dun* beer taste test. It’s for work, and I’m forcing them to help me. I mean, it’s free beer, who could complain?
We’ll be there through Memorial Day, and we’re heading back to the city Monday night. My husband and I had to rent a car to get there, so we are literally heading to the airport tomorrow simply to grab a car. Ah, the city life.

What Are Macronutrients? (Kelly Jones Nutrition) I thought this guide was super helpful! It does a deep dive into understanding macronutrients, which is something I feel like I’m still learning about myself. If you’re getting nerdy about nutrition like me, you’ll enjoy this read.
What I’m cooking

Lighter Creamy Cajun Chicken Pasta (Half Baked Harvest) This was so creamy and flavorful! Another fun way to cook boring chicken.
Mongolian Ground Beef (Seonkyoung Longest) This one was so easy to make! Almost as easy as making tacos. Definitely a new favorite in our dinner rotation.
Gochugaru Salmon with Crispy Rice (NYTimes Cooking) My husband wasn’t a huge fan of this one because he hates fish, but I LOVED it.
