I feel like this week sort of flew by. Which I guess is a good thing since every day feels like Groundhog day during this pandemic. But my week was full of fun cooking classes, lots of writing and blog work, hanging with friends online, and crocheting a lot. Here’s what was on my plate from the week.
My favorite moment
This week I had the privilege of taking two cooking classes! The first was on Wednesday night where I learned how to make this delicious cauliflower gnocchi with a white wine sauce through Noodles & Company. They just released their new cauliflower gnocchi on the menu, so if you live near a N&C location and need a comforting (and low carb!) meal this week, I highly reccomend.
My favorite meal
Another cooking class I took on Thursday was with DASH, a company that makes all kinds of awesome kitchen appliances like air fryers, juicers, egg cookers, and more. In this class we used thier classic mini waffle maker, cooking a few recipes out of the Waffly Fit Cookbook, written by Claire Thomas. Every recipe in the book uses the mini waffle maker, which I find adorable—and now I’m obsessed. The above photo is of a vanilla peanut butter protein waffle. And yes…you get four waffles per serving. I’m so in for that kind of serving size.

My favorite outfit
I’ve been particularly obsessed with this white sweater from Target recently. It works well as a cardigan over a dress, but also as a full-on pullover sweater when I want something simple that I can easily accessorize and add to. A pair of jeans, a headband, and a cute pair of flats. But let’s be honest, I wasn’t really wearing shoes much inside. It just felt nice to put them on for the picture.
