I find it a lot easier to eat healthy when I have all kinds of healthy meals ready-to-make. And while salads can sometimes seem super *boring* compared to other healthy meals, I do find them to be one of the easiest to throw together when I need a healthy lunch. So when I’m in the mood for meal prepping a salad (or it comes up on my 2021 meal plan, *wink wink*), I usually turn to one of my five favorite salads to meal prep.
Fig & Prosciutto Salad
So this salad is actually one I discovered through my work! I originally made it for a video I put together for my mini holiday cooking series, and absolutely fell in love with it. It perfectly follows my salad formula by including all the elements I think a good salad needs—something sweet, something savory, something crunchy, and something creamy.
Buffalo Chickpea Salad
Learning how to perfectly roast chickpeas was probably one of my favorite culinary tricks to learn this year. I found myself obsessing over ways I could use roasted chickpeas fresh out of the oven, like in this roasted chickpea fajita recipe and this buffalo chickpea salad. This salad has all kinds of fresh vegetables in it, plus crunchy bacon bits and chickpeas which pairs perfectly with a creamy ranch dressing. And if you’re vegetarian, you can always skip the bacon bits. Or try it with plant-based bacon!
Greek Chicken Vegetable Bowl
Honestly, a good chicken marinade goes a long way—and makes for perfect salads. This Greek chicken marinade recipe is good for all kinds of recipes, but my personal favorite is to make a large veggie bowl with toasted pita and Tzatziki for dipping. I like to throw this Greek chicken on the grill…if I’m at a location that has one. If I’m just at home, I use my cast-iron grill pan.
Green Goddess Salad
This salad was inspired by one of my favorite homemade dressings to meal prep: the green goddess dressing. For this salad, I’ll throw together a handful or two of kale, 4 oz. of pre-cooked turkey or chicken breast, 1/2 a roasted sweet potato in slices, and finish off with some sprinkled goat cheese, sliced almonds, and the dressing (which I store in this glass dressing container). You can either snag a rotisserie chicken or even find some pre-cooked turkey breast in bags in the meat aisle of the grocery store.
Apple Chicken Salad
This is probably one of my favorite salads to meal prep. While it does say to add kale in my online recipe, I will honestly make this with all kinds of salad greens. This salad formula is easy—chicken, apples, almonds, goat cheese, and balsamic dressing. It’s also great for prepping in mason jars for the rest of the week.
