I couldn’t even wait for our camping trip to be over to share this one. When I asked followers on Instagram what we should cook while camping, people unanimously said foil pack meals. Needless to say, we’ve cooked a lot of them, but these kielbasa foil packs were by far a favorite. So naturally, I have to share them with all of you.
Before heading out on our week-long camping trip, I ordered a huge Imperfect Foods box and stuffed our van with all sorts of things. We didn’t plan to dine out much on our trip because we didn’t want to change restaurants all the time (because of the pandemic and all), so I planned and cooked a lot of our meals. Between meals on the fire and using my cast-iron skillet on the propane stove, we’ve been able to throw together a few impressive dinners this week.
In my box, I ordered three items that ended up being the staple ingredients for this recipe. These kielbasa foil packs only require five ingredients, two of which are a simple sprinkling of salt and pepper. Here’s what you need:
- 1 kielbasa sausage, sliced
- 1/2 green bell pepper, sliced
- 1/2 yellow onion, sliced
- Salt
- Pepper
Pretty simple, right? The recipe I’m sharing with you makes two kielbasa foil packs, so if you’re cooking for one (or four) you can subtract or multiple accordingly.
To make, you just split those ingredients in two and add them to two pieces of aluminum foil. Sprinkle with salt and pepper, wrap it up real good, and throw them on the fire for about 10 minutes.
Kielbasa sausage is typically pre-cooked, so it’s not going to take you long to cook these. I say 10 minutes so you can get those vegetables cooked and get the sausage slices nice and crispy. The aluminum will likely get black on the bottom, don’t worry about it. It did that for us and they came out perfectly fine. Trust your instincts, they get you farther than you think. Especially when you’re camping and throwing dinner on open flames.
So many more camping recipes to come. You know me. I can’t help but document all the delicious meals I’ve been cooking up, so I have documented a lot of them so I can share recipes (and probably a full camping meal plan) with all of you. So if you plan on camping any time soon, have your eyes peeled for that blog post. I’m thinking next week—or the week after. No promises, there’s a lot of pictures from this trip to sift through.
While you’re waiting, do yourselves a favor and snag a cast-iron skillet. I know I tell you to do this a lot. But if you’re even toying with the idea of camping, you’re going to want one to cook with. It’s been a lifesaver for our meals—especially when it’s too hot out to make a fire and throw some foil packs on the grill.
Here’s the full recipe if you need it, enjoy! In need of a condiment to go with it? This is the only one you need.
Kielbasa Foil Packs
Equipment
- Aluminum foil
Ingredients
- 1 kielbasa sausage sliced
- 1/2 green bell pepper sliced thin
- 1/2 yellow onion sliced thin
- Salt & Pepper
Instructions
- Get a fire (or the grill) going outside.
- Slice up your sausage and veggies. Split what you have into two square pieces of aluminum foil.
- Sprinkle with salt and pepper, then wrap up the foil packs really tight.
- Throw them on the grill or fire pit (with the grill down) for about 10 minutes. The aluminum will char on the bottom—that's okay.
- Remove with tongs and serve with whatever sides you have! I prefer tortilla chips.
