It was a long weekend up in the mountains, and I admit, not exactly a relaxing one. I spent 36 hours with teenagers—who are awesome—up in the snowy Catskills. With no cell phone service to distract us, we spent our weekend hiking, throwing snowballs, and eating lots of junk food. Needless to say, I was utterly exhausted coming back home and I did not feel like cooking something complicated. So a simple flatbread pizza will do.
At first, I was thinking about ordering delivery and sitting in a bubble bath with a glass of wine. For a while, I did like the idea of indulging in crab wontons and General Tso’s chicken from my favorite Chinese takeout spot. But before I clicked “order” I took a look in my fridge and immediately changed my mind. It was already stocked to make the easiest dinner imaginable, so I preheated the oven.
Flatbread pizza is so versatile
First, can we talk about how the term “flatbread pizza” kind of feels like an oxymoron? Flatbread and pizza are basically the same thing, yet pizza is usually made with red sauce while flatbread isn’t. Before you break out the pitchforks, look it up. Trust me, my husband and I had quite a few fights on this topic.
However, since it’s considered a popular search term on Pinterest, I decided to just roll with it. But if you’re looking for legit pizza recipes, here’s a butternut squash kale white pizza that will rock your world.
Now flatbread pizza can be made in all kinds of ways—I mean you really can throw anything on it. You can have sauce, but if if you’d rather just shredded cheese, it works just fine. So here’s an easy one that even meat-eaters can enjoy! As a meat-eater myself, I can stand behind this statement.

Kale Parmesan Flatbread Pizza
Ingredients
- 1 Naan flatbread
- 1/2 cup shredded parmesan cheese
- 1 cup curly kale chopped small
- 1/2 tsp minced garlic
- 1 tsp olive oil
Instructions
- Preheat the oven to 400 degrees.
- Heat up the olive oil in a small pan.
- Once heated, cook the minced garlic for 15 seconds.
- Add in the curly kale and cook for 2 minutes.
- Lay the flatbread on a baking sheet. Sprinkle on half of the parmesan cheese (1/4 cup).
- Add the cooked kale and garlic to the flatbread. Sprinkle on the rest of the parmesan cheese.
- Bake for 20 minutes, then slice and serve.
