I know the official start day for Summer is June 20, but in my head, summer always starts right after Memorial Day. And after a year of being cooped up inside and not seeing so many of my favorite faces, I’m ready to get this summer going with lots of fun picnics in the park, backyard cookouts, days on the beach, and nights on the deck. So today I’m sharing some of my favorite healthy summer picnic recipes that you can take with you to all of your outdoor gatherings.
One note: Most of these recipes are cold! Meaning they are great for packing up in a cooler and taking it with you wherever you go. So if you want to picnic at the beach or in the park, you won’t have to worry about carrying anything warm or needing to reheat something.
