Recently I had to work on a project for work that required me to create ten different salad dressing recipes. It was a large project, but afterward, it made me realize how easy it is to make salad dressing. I mean, if I wanted a green goddess dressing, I would typically snag it on a Trader Joe’s run. But because I’m not making any trips to Trader Joe’s right now (it’s a bit far from us), I haven’t been able to enjoy this dressing. But then I made it and realized…why was I even buying it in the first place?
I think there are a lot of things at the store that we tend to turn to instead of making it ourselves. Salad dressings are an easy example, as well as granola. I still don’t understand why anyone would buy a $9 back of granola instead of simply making it themselves. It blows my mind.
Another thing I’ve noticed about creamy salad dressings, like the green goddess? The ingredients are super questionable. By making it at home you can control the ingredients, like the sugar count. My green goddess dressing has a Greek yogurt base and is only 12 calories per two-tablespoon serving. For storing it, I recommend these Bormioli Rocco Quattro Stagioni bottles.
I honestly believe anything will go with this dressing. While I have a few salads I gravitate towards (I show you an example below), this type of dressing can work for all kinds of meals. Sandwiches, wraps, you name it.
My go-to salad for the greek goddess dressing
When I make a salad, I tend to gravitate towards the same formula: 2 cups of greens, 1 serving of protein, something sweet, something creamy, and something crunchy. And the dressing, of course.
Here’s the salad I like to throw together for this dressing:
- 2 cups curly kale
- 4 oz. cooked turkey breast (or rotisserie chicken)
- 1/2 roasted sweet potato, in slices
- 2 tablespoons goat cheese
- 1-2 tablespoons sliced almonds
- 2 tablespoons green goddess dressing
But like I said, this salad can work for really anything (like this goddess arugula bowl). Experiment with it, and let me know in the comments below the creations you’ve made!
Green Goddess Dressing
Ingredients
- 2/3 cup plain Greek yogurt
- Juice of 1 lemon about 1/4 cup
- 1 garlic clove
- 1 cup fresh Parsley with stems, loosely packed
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Blend all the ingredients in a high-powered blender.
- Store in a mason jar or a salad dressing jar in the refrigerator for up to 2 weeks
