Like most nights, I was busy. I got home after a long photoshoot day for work and I needed to throw together some dinner. Tacos sounded good (especially since they’re so easy to throw together), so I scavenged the fridge to pull out anything I could that would go well with tacos. When I pulled out the two avocados I got that week from our Imperfect Foods box, an idea sparked. How hard could it be to make guacamole?
Now, most guacamoles have a lot of spices and add-ins, but I didn’t exactly have the time to chop up multiple veggies and add in lots of spices. Honestly, I love simple guacamole. I love buying those small guacamole packets in the grocery store for my lunches, and I was looking for something similar while whipping up some tacos for dinner. So in my true five-ingredient fashion, I chose five simple ingredients based on what had in the refrigerator and my spice cabinet and made a simple recipe.
This recipe does make a small amount—I would say about four servings of guacamole. You can easily double or triple it if you want more for a crowd. But if you’re doing what I do—throwing together dinner last minute—a small amount of guacamole should work perfectly. Just enough to lather your tacos with that green goodness, and save some guacamole for leftover tacos the next night.
Guacamole is a great topping for all types of Mexican dishes (especially this chicken fajita quesadilla recipe), but I’m also a huge fan of having guacamole for a snack. I like to eat with chips (of course), but also with fresh-cut vegetables like colorful bell peppers and carrot sticks. You could even have it as a dip when making my carrot fries recipe!
Guacamole
Ingredients
- 2 avocados scooped out
- 1/2 lime
- 1 tbsp cilantro chopped
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- In a small bowl, mash the scooped avocados with a fork.
- Squeeze in the 1/2 lime, then mix in the cilantro.
- Add in salt and pepper. If the taste isn't to your liking, adjust the amount of salt and pepper in the guacamole.
- Serve with chips, fresh-cut vegetables, or chicken fajita quesadillas!
