Well hello, friends! I know it’s been a few days since I’ve posted anything. To be quite honest with all of you, ever since I revealed that I wrote a novel, I gave myself the space to double down on some edits and send pitches to prospective agents. I knew that would mean going radio silent on the blog for a few days, and giving myself space to really focus on my book has already been well worth it. But I’m back and ready to share with you my latest recipe I’m obsessed with—this easy baked salmon!
So I don’t really cook a ton of fish at home. Fish is pretty expensive compared to other meat in NYC, and since I’m a bit of a budget freak when it comes to our grocery bill, I don’t usually plan for it. Plus, my husband isn’t a huge fan of fish, so I just don’t bother.
But, when I do decide to splurge on a little fish, I always love to grab a few salmon fillets. I am a seafood lover at heart (grew up by the beach and all), and salmon is probably my favorite fish to eat. It’s just so incredibly tasty on its own, which is why I love this easy baked salmon recipe. The lemon and the parsley do add a touch of flavor, but they don’t mask that salmon flavor that I really like.
Oh, and did I tell you this easy baked salmon recipe only needs five ingredients? Uh, yeah. You know I’m a fan of five-ingredient recipes!
So, what do you need? This recipe calls for two 4 oz. salmon fillets. But you can quite honestly cook one or even more than two, depending on how many you are cooking for. You’ll also need a lemon, parsley, olive oil, and of course, some good ol’ salt & pepper. Okay, I guess you can technically call that six ingredients. But I usually count the salt & pepper seasoning combo as one ingredient in my recipe. And, well, as I always say…this is my blog and I’ll blog like I want to. Ha.
Another thing to note: This recipe was actually an adaptation from one I saw online. Well Plated by Erin is a food blog that I admire, and her baked salmon recipe has always stood out to me because of how easy it is. But I decided to make a few small adjustments to it based on what I had in the fridge. And even if I did make some changes, I always credit the blog and the original recipe. Because it’s just the right thing to do, you know?

This easy baked salmon recipe makes the perfect light dinner—or lunch—when you’re trying to keep your meals slim. Typically I like to serve my salmon with different kinds of roasted or steamed vegetables. But if you need more ideas, here are a few here on the blog you can turn to:

The Easiest Baked Salmon
Equipment
- Aluminum foil
Ingredients
- 2 4 oz. salmon fillets
- 1 lemon sliced
- 1/2 cup parsley with sprigs lossely packed
- 2 tsp olive oil
- Salt & pepper
Instructions
- Preheat the oven to 375 degrees.
- Place a piece of aluminum foil on a small sheet pan.
- Drizzle 1/2 teaspoon of olive oil on the bottom of the aluminum.
- Lay down a few slices of the lemon on the bottom of the aluminum foil. Then add a few parsley sprigs.
- Place the salmon fillets on top of the lemon and parsley.
- Drizzle the rest of the olive oil on top of the salmon fillets, then season with salt and pepper.
- Add a few more lemon slices on top, along with some parsley.
- Close up the aluminum foil and bake for 20 minutes.
- Once finished baking, turn the broiler on. Open up the aluminum foil and place the sheet pan back in the oven.
- Broil for 3-5 minutes, or until the salmon is fully cooked through. The internal temperature should read 145 degrees.
- Squeeze the warmed lemon on top of the salmon fillet. Serve with your favorite vegetables.
