When I have a few apple and pear stragglers in the fridge, the solution is clear: apple-pear crisp. You can’t go wrong with warm crisp and creamy ice cream for dessert. In my opinion, it really works for every season. So I recently whipped up this recipe in my cast-iron skillet and decided to share it with all of you.
To be honest? This crisp is versatile.
While I show you how to make this crisp using leftover apples and pears, you really could make it with whatever fruit you have on hand. You could make a blueberry crisp, blackberry crisp, even a strawberry crisp—or how about a strawberry rhubarb crisp! You simply sub out the apples and the pears and add your fruit of choice, and voila! Crisp.
Don’t have pears? Just use five apples!
The easiest way to peel and chop apples and pears.
Yeah yeah, you can do this by hand. But I like to use my Kitchen Aid attachment for this. When you buy the spiralizer attachment for the Kitchen Aid, you can actually peel apples using it, and slice them up into smaller thin circles. You then chop up the spiralized apples into quarters, and look at that, you have easy small chopped chunks for your apple-pear crisp.
I know it’s not one of the basic kitchen supplies I recommend, but if you’re starting to cook more and find yourself investing in a Kitchen Aid, get the attachment. If you don’t have a Kitchen Aid, you can actually buy an apple peeler and slicer where you can crank it by hand. This one is similar to the one we used growing up.
And of course, get yourself a cast-iron skillet. You’re really going to use it all the time, trust me.
Don’t forget the ice cream!
Crisp really isn’t the same without ice cream. And it may sound strange, but with this apple-pear crisp, I actually scooped some strawberry ice cream into it. For the flavor? Well, kind of. For the fact that strawberry ice cream was the only thing we had in the fridge at the time? That’s more like it.

Apple-Pear Crisp
Ingredients
- 3 apples
- 2 pears
- 1 Tbsp cornstarch
- 3/4 cup sugar
- 1 tsp cinnamon
- 1 cup rolled-cut oats
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1/2 cup butter melted
Instructions
- Preheat the oven to 325 degrees.
- Core, peel, and chop the apples and pears into small pieces.
- Mix the chopped apples and pears in a large bowl with the cinnamon, sugar, and cornstarch.
- Add the apple-pear mixture to a seasoned cast-iron skillet (or a small casserole dish).
- In another bowl, mix the oats, brown sugar, flour, and melted butter. Once combined, spread the oat mixture on top of the sugared apples and pears.
- Place in the oven and bake for 45 minutes.
- Serve warm with scoops of ice cream.
